Andouille Sausage?

I have 3 andouille sausages left to use up. I might end up freezing them, but I'd love to use them up in something other than gumbo or jambalaya. Any suggestions?

My white bean and kale soup posted, I often add a little sauteed andouille

Red Beans and rice

Great in an omelette or scrambled eggs, delicious

Add some bread crumbs and cheese and stuff in a chicken breasts or pork tenderloin or chops to cook

A shrimp and andouille pasta toss is nice and easy

In calzones with cheeses and peppers.

On pizza instead of sausage

Grits are great topped with a mix of andouille, shrimp, tomatoes and onions and peppers. A simple ragu over grits is wonderful

Cajun Pasta is calling my name - I can just use low carb pasta. Now to find a recipe for just one person >.>

They were actually bought to make a seafood boil, but I got injured last week and didn't cook it. I had to throw out my crab (luckily I had only bought a tiny amount and didn't waste a lot of money there).
