Turkey casserole

Post by Mikekey » Mon Oct 12, 2015 7:14 pm

About 50 years ago I had a turkey casserole at a friend's parent's house that was made with raw rice, cooked turkey, cream of mushroom soup, cashews and maybe cheese. I was given the recipe and made it a couple of times but in one of my many moves in my wild, younger days, I lost it. The friend and the parents are gone now, and I would love to have this casserole recipe again to take to a potluck.
Everything was mixed together in a dutch oven or roasting pan with a lid, and popped into the oven until the rice was done.
Anyone have something sinmilar, or know where I could find it?
Thanks.

I've made lots of those kinds of recipes Mike, I do remember a good one using almonds instead of cashews and using chicken instead, I'm not sure if it's posted here I'll look and see, I'm not sure if that one is what you are after but it was so good, I have lots of good rice casseroles posted here, you may want to look through them to see if anyone of them is to you fancy..

My all time favorite rice casserole, you can omit the broccoli if you want, I suggest to leave it in though, add in turkey and cashews Mike.. you will LOVE this one!

Thanks, Carol. The last one may work with a couple of changes.

Thanks, dienia! That is really close (I don't remember celery, but it WAS about 50 years ago :) )
I will be making this after U.S. Thanksgiving for a small leftovers potluck.
