I know this is not the place to ask for a recipe, but I love the baked pineapple dish that is often served with ham and have misplaced my old standby recipe. It uses cornstarch instead of flour to thicken the juices, has pineapple chunks or tidbits, cheddar cheese, and is topped with Ritz crackers. No eggs and no bread. It's very similar to Elsie's Pineapple Casserole (which uses a lot less sugar than Paula Deen's version).
The contrasting flavors are wonderful and it also goes with other meats.

Good to see you Mary, what better place to ask for a recipe for baked pinepple to go with Easter ham than right here in our Potluck Easter thread! We don't have any "special" recipes per say. The only request I have from the family is for my Mushroom Sausage Dressing. I just realized, I don't even have a pic for it! I will fix that Sunday! ;) They have even requested 2 pans so there will be plenty for leftovers!
I always make a ham with brown sugar, mustard and pineapple juice. I see Gerry yours uses orange juice. I guess I use pineapple juice, because we usually have a pineapple upside down cake. ;)
Now that I think about it, I forgot that my daughters boyfriend asked for Fried Corn. He had it the last time they came for dinner and he just loved it.
My menu: Ham, Au Gratin Potatoes, Fried Corn, Mushroom Sausage Dressing, Steamed Broccoli, Bergy's Tuscan Style Roasted Asparagus , Deviled eggs, Dinner rolls, and pineapple upside downcake. I might also make a coconut cream pie. (Hubby's favorite pie).

2 tablespoons cornstarch
1/4 cup cold water
2 eggs
1 tablespoon vanilla extract
1 tablespoon butter
1 teaspoon ground cinnamon
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
In a mixing bowl, mix together the pineapple, sugar, cornstarch, water, eggs and vanilla. Pour the mixture into the prepared baking dish. Dot the mixture with butter and sprinkle with cinnamon.
Bake in a preheated 350 degrees F (175 degrees C) oven for 1 hour.

Sue: That's the closest one I've found online, but I haven't tried it yet. The 1 Tablespoon of cornstarch seems scant to me, since that would be the equivalent of 2 Tablespoons of flour and most recipes that use flour call for 4-6 Tablespoons. Worth experimenting with though.
Dissie: I love the additions of vanilla and cinnamon, but the appeal of an eggless, lower sugar version is better for me, and we love the contrasting sharp flavor of cheddar and the crunch of Ritz crackers on top.
Thank you both for helping me search. I doubt that I'll get it all together for Easter potlucks, Gerry. I will work on getting one ready to post in the future though. On reflection, I think this must be one of those "Southern" dishes (which many have heard of and never tried).

Sounds like special recipes to me Dissie! Love when I see new recipes that are begging to be made! http://www.recipezazz.com/recipe/southe ... uffing-611 Just about to put my hams in the oven, speaking of ham we often do use pineaple instead of the orange juice, when we do I go with pineapple slices. We love oranges, pineapple and apricots when making baked ham, for taste and presentation!

We had a lovely family Easter weekend, thanks to our members we enjoyed some great new recipes for our holiday meals.Thanking everyone for the great recipes and suggestions, all have been added to my Holiday Cookbook.

Back to more renos and clearing have me still needing to think to my Easter weekend menus, running late had me decide to go through our Easter Potluck thread from 2013. Family favorites are a given but as always like to add to our tried and true, what better place to find new recipes and ideas then right here on Zazz. Looking forward to seeing your 2015 plans for Easter, recipes and photos welcome ... come in and share!
