Easter 2022

Having seen to 2020 a year unlike one we have ever known, challenges we never expected to see and the first Easter we could not gather. Though it all I decided I would not let it take away our family holiday traditions. The last two Easters as always salmon for Good Friday and colored the eggs but with just me. A full course Easter Sunday dinner albeit no gatherings allowed, as I had been doing holiday meals were passed to family via door step pick up.

This year looks promising hoping to see family home for Easter. May be in small groups which will see to ham for Easter Sunday and likely turkey dinner during Easter week.

Great to see members dropping in. I am hoping to see you and members stop by to add your recipe plans for the holiday season. With much depending on the numbers for safe gathering plans for this Easter season seems one has to plan with that in mind but it does sound promising. I have always thought planning was half the fun.

For years and years dh saw to pink salmon which we enjoyed baked with a delicious dressing, one of the grans kept the tradition going. Have to love the memories we made doing the salmon especially when the weather cooperated and we could bbq. Seeing my gran is now in Toronto I now do salmon fillets.

Needing leeks to tie my Vegetable Bundles will work out really well, the greens to tie will likely see me cutting the white as well as some green in strips and possibly the carrots in thin strips as well. Maybe! But limeleaf's recipe is on the menu!

Having recently made lovenretirment's cole slaw recipe which dd and I loved, finding it a perfect make ahead that really keeps well in the fridge for days, likely longer but it didn't last that long! It is so on for the holidays.

Adding fresh herbs to my Easter shop list had me think to the Dill Mayonnaise that is a favorite at our house when salmon is on the menu.

Working on the list I was reminded one of the grans is not fond of cabbage which sees me assuring extra croutons on hand for the Caesar Salad. A small bowl of the family favorite must make Caesar Salad for Friday and of course a large bowl over the holiday season is a given.

For those of you doing battered fish, you may want to have a look at Crispy Fry Batter, it is one of the best batters I have found, always makes for light, crispy and golden brown. I suspect it is the beaten egg whites that make this recipe work so well.

We are told to expect the worst blizzard in decades to happen this week here in Saskatchewan, to expect road closures, power outages and poor travel conditions until it clears, hopefully we manage to see it not happen. Keeping plans in place to make for family getting together be it two three or more at at time when travel time is safe and those numbers don't go up.

For smaller groups I find Orange Rosemary Chicken an excellent option, never sees to left overs.

Seems Easter Sunday will see to some extra grans which means tomorrow best get the cheesecakes made adding to the Cookies and Cream Strawberry Freeze that I have in my Easter freezer stash.

A number of my friends make Carrot Cake with Cream Cheese Frosting for their Easter dessert, my absolute favorite recipe is one I use for carrot cake, muffins and loaves. Most holidays carrot muffins for brunch a real treat.

Planning here in Saskatchewan has me looking to options as in many areas we are seeing to a winter blizzard predicted to be the worst in two decades, some family to the south have already received the brunt of it. Here more than enough snow to my driveway and walkways to have clean up early this morning, remains to be seen if our area will see to the heavy snow and roadway closures predicted. Thanks to freezers I continue to prepare what can be made ahead, we will have to work around both the numbers and the major Colorado Low that has hit us to see just when we can get together.

Guessing chances of fresh green beans being available not likely, having great tasting garden grown carrots still on hand will go with one of our family favorites

This wows at Easter brunches, an absolute knock your socks off dessert for brunches or a sweet ending to your Easter meal. Would that I had a photo as along with great taste it makes for great presentation.
