Welcome to 2018 Christmas at our Potluck Forum

Post by Gerry » Thu Dec 13, 2018 12:25 pm

I love Christmas, the pre Christmas get-togethers, tree decorating day and Christmas week be it hosting the main event or doing the make and takes. Getting to the lists and planning ahead sees to enjoying the holiday season with family and friends.

For me a holiday plus is knowing that the family must make desserts and sweet offerings are make aheads and freezer friendly. Happy is knowing there are three cheesecakes in the freezer and on for the main for Christmas Day.

The must make for the Christmas dessert our Cherry Cheese Cake

With cheesecake the family given for Christmas Holiday Baked Alaska has become our New Years dessert, it's a show stopper from Canadian Living perfect for those occasions when a knock your socks off spectacular dessert is called for. Makes for an awesome dessert, perfect for that holiday meal and special celebrations. I was absolutely intimidated the first time making. Don't be - for the most part it is one of those marvelous make aheads requiring only a quick assembly, the meringue to be made and a few minutes under the broiler.

Christmas Eve sees us gather early in the day for family time, the pumpernickel and spinach dip a must, a vegetable tray and shrimp platter. Our evening meal for many many years a large tureen of Clam Chowder along with the second choice for the none seafood lovers, this year the request is for our old fashioned potato chowder. Always freshly baked bread or rolls. Along with the chowders a charcuterie board, this year with the addition of son's home smoked cheese, grandsons special sweet pickle pickled eggs with onion, habanero and jalappeno. The sweet ending, our Butter Tarts.

We love variety which often has me making a rice dressing as well as the traditional bread stuffing when roasting our turkey. With a larger bird one can stuff with rice and follow with the traditional bread dressing or the Rice Dressing can be baked in a casserole and served as a side dish. Never any leftovers with this old classic.
