Will be doing ham for our Easter dinner, when it comes to ham I think to scalloped potatoes. I have yet to post my recipe but did find CookTillUDrop's recipe which is similar to one from my mom's family cookbook. We add onion between the layers, other than that basically the same.

Always a good supply of eggs on hand at Easter for coloring. Although fewer these past years they are a must make for me! Many of our traditional Easter recipes revolve around using the extra eggs, Egg Salad, Potato salad and Egg Salad and Egg Salad Sandwiches come to mind. Some methods I find work for me, while mine not posted Kittencals is very similar.

Word was making hard boiled eggs in the pressure cooker/insta pots made for perfect eggs each and every time. I was hesitant and admittedly a bit skeptical until a family member made them in my pressure cooker, I was amazed quick, super easy and perfect every time!

We like eggs in our potato salad, if you are thinking to making potato salad and do not have hard boiled eggs on hand Insta Pot Egg Loaf is a real winner.

The eggs are cooling all the while hoping I have dye in my stash as my order saw to not available. I am sure I have food coloring which will work even it means only two or three colors this year! As we prepare I am adding the 2019 Easter thread with extra Easter recipes from the time when we saw to wonderful family gatherings before 2020.

:) Wow you went to a lot of work on this thread. I decided to come look at the forums. It must be awesome having a large, close family. We went to church on Easter and had dinner with my sis the day before.
