I'm freezing a truck load this summer, I love the idea of having it in my freezer all winter, it makes really good cakes and you can even throw it in soups.

When I grate my zukes and freeze them I don't cook it or blanch it first.

When I thaw it out I let it drain on paper towels or dish towel that is not terry cloth.
I also have squeezed it out and that works well too.

I don't drain my thawed zucchini when using it in breads and muffins. I just add less oil or other liquid ingredients. I used 1/3 cup oil instead of 1 cup in a muffin recipe I made last year. So it was healthier, I found the batter was the perfect consistency without the oil, but I added it because I tried low fat recipes before and they didn't have the right finished texture and stuck to the muffin papers.

I have 4 fairly big zucchini in my frig right now, but casseroles just aren't looking appealing right now, and I already did a huge batch of deep-fried zucchini sticks, maybe I should do some baking.

OMG my freezer is stocked full of zucchini for baking and soups. I have so much but I also love it! I gave so much away too! :lol: I sure do love it!

i also do something we call fritata
grate: zucchini, potatoes (half as much as zuch), onion to your taste, carrot for color
enough eggs to bind together and tons of garlic (for us)
top with cheddar cheese bake one hour
this reheats well in the micro
i usually make a huge pan full for the week

I can attest to bergies canned salsa very very good.

I think that zucchini could cure world hunger, one plant grows like a weed and could feed an army.

Since I don't have a garden this year. I am buying zucchini from the farmers market. Thankfully there are a couple farmers that sell big zucchini for $1 each. I bought 4 and had a Zucchini Day. I made stuff for the freezer. 2 meals Zucchini &Rice Casserole, 2 meals Zucchini Pizza Casserole, 2 Chocolate Zucchini Cake and 36 Zucchini Chocolate Chip Muffins.
