Can recipe #13523 Aunt Melzie Hot mustard be canned?

Post by MommaG » Wed Sep 21, 2022 5:01 pm

This is one of my recipes I've posted here, I'm trying to figure out if I can hot water bath it to can it. The ag extension office said since the recipe was so old they couldn't say yes. The egg is cooked during the process of making the mustard.

Any help would be appreciated.

I would not try it because of the eggs. Eggs have high alkaline therefore should be pressure canned. Water bath canning is more for acidic items. That is what I have been thought :/
Try using xantan gum instead of the eggs. 1 teaspoon xantan = 1 egg. Usually I would add a bit of water to the xantan gum but the recipe in question has enough liquid to absorb it....

I did a quick search on Xanthan gum. It is a thickening agent, which is what the eggs are used for in this recipe. The web also says you can use corn starch 1:1 for Xanthan gum. I may try the cornstarch since I doubt I can find Xanthan here in Tyler.
If I used the cornstarch then I should be able to can the mustard with the water bath, right?
QueenBea you are awesome as ever!

I've done 2 batches and so far it has worked fine. It takes a bit more cornstarch to get it to thicken (guessing because I'm making a slurry - not using much water). My "testers" said it tastes good. I can't taste due to my radiation treatment.
do you think Cranberry salsa (recipe #7583) could be canned as well?
