Beautiful picture FEM!
It made me check the recipe right away. And it actually brought up warm memories of my dad; he loved "omelet de perejil" (parsley omelet). I' m sure he would have loved this version with so many different types of cheese as a filling.

Thanks, Pia! It's delicious and the parsley was increased which to me, made it better. The cheese combo works so very well.
