I want to apologize for not making ellie's Poached dried apricots and cherries with cardamom yet, but I had a heck of a time finding dried cherries and just recently found them. I had every intention on making it this weekend, but haven't been feeling well and my energy is kapoot. I will be making this recipe once I feel better, hopefully soon.

Being a snow and blow day I made mashed potatoes to go with our chicken for lunch today, made mention the leftovers would be great for patties for tomorrows lunch a perfect time to try dieans's recipe. Been a long while since I made them.
