Tried and True Gluten Free Recipes

I wanted to post some that I make regularly and have always turned out great! If you would like to add to it, please do.

After going gf, I missed my grandma's Bavarian pancakes (similar to a crepe, but larger), so I found this recipe and it always turns out well. Easy to make and to double.

Banana bread or cake. My kids really liked this. I don't make it anymore bcz I have to keep one child off bananas, but I may try it some day with pears?

I just tried a chocolate layer cake recipe:

I used the tapioca starch, rice milk, and canola oil because I already had them. I also used almost 1/8 cup more of the chocolate chips because that's how much was leftover in the bag after setting out the cake and frosting ingredients. Next time, I will use dutch-processed cocoa instead of regular. Until someone convinces me otherwise, this is my new favorite chocolate cake recipe.

I made this vegan frosting recipe, which was good, but I will be looking for a darker chocolate (vegan) one next time:

I just tried a gf/cf/sf/egg free cookie recipe in the dehydrator. It turned out awesome! I'm going to have to buy more of those plastic sheets for the dehydrator to make a bigger batch. When the recipe posts, I'll try to remember to put it here.

What is gluten-free?? Why is it that some people need to be on gluten-free diets?
Is it an allergy?? Is it an intolerance??
I have not a clue as to what makes a recipe gluten free...
Sorry for my ignorance on this subject, but I am curious about this. I had never heard of this until last year when I was at a conference and one of the attendees was on a special diet which was gluten-free. The poor girl's meal looked awful....

I'll let someone else with better info answer that. All I know is that a lot of people who go off of it have their health problems cleared up (and sometimes they go off of dairy too - another big allergy food). Celiacs can't have a crumb of gluten or they get really sick. If you're just 'intolerant', it's not so bad. You may have symptoms if you have too much. My son's behavior got better after we removed the gluten and dairy from his diet. Now, we let him have it occasionally (not very often) as a treat. The foods don't need to be bad. The conference chef was apparently not able to cater to a gluten free need, which is unusual these days. My DD can't have either one, and about 8 more foods. We went to Disneyworld and she had a fantastic buffet, all catered to her!

I usually check the Wikepedia for facts, etc., so here's a link to their gluten-free diet page:

I am gluten-free because of thyroid issues. Here's a link to why:

I have also heard that the effects of eating gluten can stay in your system for 6 months, which is why some of us need to be extra-careful. And I've also heard that the reason why it's so bad in the U.S. Is because what we've done to wheat. Someone told me that people with gluten intolerance here can go to France and eat bread. Go figure.

The diet itself isn't so bad. Sandwiches and pizza are what I miss most, although I just found a gluten-free vegan bread machine recipe, so I have high hopes. Pizza is doable, but requires more effort and planning, where I used to just pick up the phone. I'm very excited to have recently found an excellent gluten-free vegan chocolate cake recipe, but now I'm trying to find a better GFV chocolate frosting recipe to go with it. Pasta is a no-brainer nowadays with all the brown rice pastas available (they're also whole-grain and taste much better than whole-wheat pastas, IMHO).

Anyway, if avoiding gluten saves my thyroid without prescription drugs, I'm down with that.

Netgirl, have you tried the recipe I posted (I think)? Or do you not like to make bread by hand. It's really not hard. And this bread always turns out for me - making 2 average sized loaves at a time. http://www.recipezazz.com/recipe/soft-w ... luten-free
