It is hard to decide. I think sometimes you just have to try the store brands or generic ones.

I like to make my own salad dressings; but, the Publix brand is really good. I do prefer Daisy sour cream; but, Publix butter is just fine for me.
Trash bags. I do like the Hefty expandables or stretchables.
Cleaners, some are just fine with me being generic.

In our house, we have a mix of generic and brand names. Has anyone tried WalMart's new brand of generics yet? Very plain blue labels - they had several items located at the entrance displays. I picked up a bottle of vegetable oil since that's pretty difficult thing to mess up. I'm with K, Daisy sour cream. That's one of the few brands I will not waiver on.

I do have a few of their generics. Like you said, some things, I'm not too worried about - some, I would be careful with
But, TP, towels, napkins, oil, dish soap, etc. I care less. If I can save a bit, why not?
