Pesto butter ...
Can be made with cilantro or basil. I usually use my favorite recipe. I just tend to use less oil when I make it for the butter. But you can also just use a slotted spoon and let some of the oil drain. That works too.
Cilantro pesto, I love with almonds. Basil I love with pine nuts.
Just mix 1/1 butter and pesto. But you can really make it your own. Great smeared on a baguette and baked. Top with a little parm and delicious. Also great on a steak or pork chops as a condiment.
Now avocado butter is totally good. But you need to add some acidity so the avocado doesn't brown and it should be used that day. Avocado, mixed with butter and lime juice or you can use orange too.
Great for a grilled vegetable or chicken sandwich. Haven't used it for anything else.

Green chili butter is awesome. Just mix with shallots and roll into a log or keep as is. Simple put a little over grilled chicken or steak. Delicious and easy.
Add a little chili powder and cumin with the chilies and shallots AND it is a sauce for the chicken. Squeeze a little lime in it and WOW, can't be more perfect for a simple sauce to a PLAIN chicken breast.
This also makes a great sauce to toss fried chicken wings in.
Just make sure to grind them up fine. I use my mini food processor.

Thx Kit, I love flavored butters. It is just a nice way to Jazz up a simple dish.
Red wine or port and butter with shallots is amazing over steak or a tenderloin. Easy, make ahead and wonderful. Easier than a sauce, but just as good.

me too Kim I used to experiment with tons of different flavored butters, I have recipes stuck away in my paper files for many of them I need to dig them out and post them here ;)
