Dad always wanted a fried egg on top of his, over toast. And, Mom served sliced tomatoes on the side.

I have a pot of classic ham and bean soup (senate) style cooking. I will freeze most; but, have a bowl for dinner. I have plenty of fruit too.

Tonight I used up the last of my frozen halved green peppers and made stuffed peppers, old fashioned corn casserole and carrots in a brown sugar sauce with dijon mustard, cumin and cayenne pepper.

Sorry about no beans; that has to be hard. But, your dinner sounds great.
The corn casserole really sounds good ... but, I am a sucker for corn!!
I always keep at least 3-4 containers of soup in my freezer. Makes a great lunch or quick dinner when needed.
