I ended up making something different after all - the bf still had his pasta, but I cooked up some more bangers and mash for myself when I realized I still had more of those purple mashed sweet potatoes and some gravy to use up.
On a side note, I will be so happy once all those purple sweet potatoes are used up. I still have a few cooked and frozen. They sounded so cool when I saw them in the store, but I doubt I will ever buy them again. They taste far more starchy than a regular sweet potato and they discolor everything they come into contact with.

Dinner sounds good. I have made purple potatoes a few ways. Just as a mash, which is pretty cool looking; and, it is nice in a potato salad for the 4th of july. Red, white, and basically blue. There are a couple varieties; but, they can be a bit more starchy vs creamy.
