What WAS on Your Plate & WHAT'S for Dinner 3/7/17-3/8/17
IT'S TUESDAY EVERYONE!
I Hope Everyone Is Safe After The Round Of Nasty Storms Through The Midwest ...
Today ...
Enjoying time up at my friends campsite in their RV - and, going to the Strawberry Festival today - gorgeous morning for a sunrise by the lake too.
Last night, almost finished off my cake, and drank probably too much, etc.
But, my friend make a great bagel bar w/all the NY toppings and scrambled eggs this am. That way, the kids and adults could eat whenever we all woke up. Delish.
I am sure we will eat and sample WAY too many STRAWBERRY items today; and, bring back some ... but, the kids insisted on my chicken casserole for dinner.
https://www.foodfanatic.com/recipes/chi ... le-recipe/ but ... I use brocooli vs peas, pimentos and shredded carrots; chicken broth; also added bread crumbs and cheese ... iceberg wedge on the side. I'm sure we will pick up some strawberry wine; for a local winery too.
I actually made the casserole yesterday; so, all I have to do is pop it in the oven. That way, we can enjoy a little fun out by the lake.

Hey Everyone ... It's getting close to that Magical Irish Day! So, who enjoys a good 'Corned Beef and Cabbage' on St Paddy's Day?
Now, if you plan to make your own corned beef; you should plan now. It does take 5-7 days in the refrigerator. I bought my brisket a couple of weeks ago; so, it will come out of the freezer very soon.
And don't forget ... CB makes other great dishes - hash, creamed corned beef over biscuits, soup, reuben or rachel sandwiches, reuben dip in a bread bowl, ravioli, and beef pockets.
So, even if you don't like corned beef and cabbage ... there are lots of other uses for that corned beef.

Tonight I made fiesta lime marinated shrimp with sauted onion, peppers, garlic and dill in a faux white wine sauce over rice.

Slow start to the day. Back from a fun 2 nights and 1 day at the Strawberry Festival. Got lots of berries; and ate WAY TOO many berries. Had fun with my friends; but, now back home.
Dinner ... Taking some berries I picked for them, BBQ strawberry sauce, and fresh strawberry juice for cocktails. They invited me for BBQ'd strawberry chicken on the grill, corn on the cob and spud salad. I'm all for that.

Last night we had the last batch of taco meat I had made and froze. Tonight will be soup & salad for myself, and pasta for my bf with some ciabatta bread.

Sounds good. I am soaking my beans tonight; to make ham soup for my freezer stash tomorrow. I love having it on hand. Soup is always a great go to.
