Wow, I'm So Late Today ... Been A Very Busy Morning
Today's Cooking ...
No real cooking. My leftover meatballs and pasta from Thurs. Add a bit more swiss chard, mushrooms, broth; and, just reheat. Fruit salad. Super easy.
Prepping for a big cocktail party on Monday; so, lots of shopping today and list making. NOT my party - just doing the food with a friend.

We are having steak, baked potatoes and some kind of veggie or salad with apple crisp and vanilla ice cream -- we haven't had this for a while but it is definitely my husband's favorite type of meal.

I'm making a chicken pasta salad
Ingredients
1 pound pasta (shells, bow ties, or macaroni)
2 large cans chicken
1 & 1/2 cups mayonnaise
1 jar marinated artichoke hearts
1/2 cup diced green pepper
1 teaspoon dried basil or 2 Tablespoons fresh basil
1/2 teaspoon dried oregano
1 teaspoon garlic powder
1 teaspoon fresh ground pepper
1 cup Parmesan cheese
Instructions
1_ Cook pasta until desired softness...keep in mind that pasta will firm up when it is run through cold water, so cook a little longer than normal.
2_ In a large bowl, mix the mayo, spices, diced pepper, chicken (drained), artichokes (drained, but I added a couple tablespoons of the liquid to the dressing). Mix gently to combine.
3_ Once pasta is cooked, run it under cold water and drain well. Then add the pasta to the other ingredients and stir gently. Fold in Parmesan cheese.
4_ Taste to adjust seasoning for your tastes. Cover and chill until ready to serve.

Ellie, sounds delicious! I don't like too many sweets; but, I would enjoy that. I like fruity desserts like that. DH has good taste. Cagey - that salad sounds really good!
We just had leftover pizza tonight. Tomorrow I am planning to make sausages with roasted veggies (a mixture of whatever veggies are left in my fridge from the week tossed with olive oil and seasonings). I have some purple sweet potatoes that I might chop up and add in the mix, or just roast them in another pan. I bought a bag of them over a week ago and still haven't tried them.

I just seared off a top round roast and put it in a bed of fresh green beans, chopped potatoes, carrots and onions. Braising in beef stock and grape juice for about 4 hours. Should fall apart when it's done.
