What WAS on your Plate & WHAT'S for Dinner Tonight 1/25

Way to go Broncos and Panthers - Made for a good Sunday TV


Sorry about the double post yesterday.
Ended up making a simple pasta dish with shrimp last night. Cream, parm, bacon, shrimp. Like a pasta carbonara of sorts. It was quick and easy.

Tonight, 2 options. I need to make my turkey/rice stuffed chard rolls; but, I may run out of time. Been working on lots of little things; and, need to work midnights.

I do have a sweet potato; which would be really nice topped with my black bean chili. I also have an avocado; so, that would be nice on a green salad.
Either way, one tonight; and, one tomorrow night.

For tonight I will be making meatloaf, this recipe but my plan is adding some cheese and a few other ingredients :)


2 lbs of ground beef
8 oz of tomato sauce
1 cup fresh bread crumbs
⅓ cup of A1 Original Steak Sauce
2 eggs, beaten
½ tsp pepper

Instructions

Reserve ½ of the tomato sauce and mix the rest of the ingredients.
Press into a 9×5 loaf pan.
Bake at 350 degrees for 50 minutes.
Top with remaining sauce.
Bake an additional 10 minutes or until cooked thoroughly.

Tonight I made Shake 'n Bake Coconut Curry Chicken Breasts. Just added some toasted coconut that had been whirred in the food processor till it was the consistency of the shake 'n bake, added a teaspoon of curry powder and a dash of cayenne pepper. Dipped the chicken in egg wash and then the crumb mixture, and baked at 400°F for 40 minutes (they were extra thick chicken breasts). Also had some gnocchi mixed with sauted onions, peppers, garlic and cherry tomatoes. Then added some butter and parmesan cheese. It was very good.

Sorry, I didn't check in last night ... I got tied up on a few things.

Meatloaf, OMG, a favorite. I make 2 ... just so I can have meatloaf sandwiches later on.
Shapes, you always have such good comfort food.
Lovin, that sounds really interesting. I bet they were really good. I'm still learning to like curry ... but, always willing to try it.
