Need a specific type of apple pie recipe please

I know the majority of apple pie recipes call for baking raw apples right in the crust, but I'm looking for one where the apples and sugar are cooked first, then piled into the crust and baked. Oh....I know how to zest an orange. But I'm looking to do more than just add a bit of orange zest to my recipe. The dish I remember from the restaurant actually had little chunks of orange peel right in with the chicken and vegetables and sauce. That is what I'm trying to replicate here at home.

Hmmmm....maybe part of the problem is that my recipe makes almost a full quart for just the two of us. I'd think that chilling the syrup would encourage crystalization, but maybe your recipe uses much more corn syrup than mine? I'd be interested i the proportions of white to brown sugar to corn syru...
