What a delicious side this made, but can see it being a main for lunch or so if you want to keep it simple. I don’t own a spiral slicer, so cut the zucchini thin and it worked great. You just gotta love slow cooker meals for its set-it-and-forget-it appeal, but love it even better when it’s a top notch delicious meal. To make it a complete meal, added some kielbasa that was grilled quickly over the stove top before adding it to the slow cooker. We loved this version of chicken! It is delicious and pairs so well with the bbq sauce and the addition of the veggies. Because it’s not grilling season in my area, finished the chicken in the broiler, watching it carefully so it would not overcook and it worked really well. Tastes like a weekend type of omelet you get at a really good neighborhood breakfast place while on holiday. Serious, that’s what it reminds me of.
