This recipe from Sam Sifton at the NYTimes is so amazing I just had to share it here. Not only is it flavorful but extremely easy - just marinate, roast and serve. It reminded me of the wonderful wraps we enjoyed for lunch on a trip to Israel. The open-air lunch stands included grilled chicken, falafel or lamb wrapped in pita and were served up with crisp cucumbers, tomatoes and a refreshing...
One of my favorite recipes. And, it is actually pretty easy to make. Thin pounded chicken breasts stuffed with spinach, olives, cheeses, and shallots; rolled up and served with a rich sun dried and diced tomato, and olive sauce. I like to serve this with pasta tossed with garlic and fresh herbs, salad and some roasted squash.
A KC favorite!
Here is a delicious recipe I make quite often.
Adapted form a recipe I found on the internet.
This is my new favorite pasta recipe. I've made it about 10 times the last few months because it's so easy and so good. It's adapted from a grocery store recipe. It's great even without the chicken. You can add onion to this also by sauteing some in the olive oil before adding the tomatoes. Please use all fresh ingredients for the best results.
A delicious rosemary and orange flavoured roast chicken that is a big hit with family and friends. Recipe works equally well with chicken pieces. As with the whole chicken baking time will vary as to the size of the chicken, with the pieces needing less baking time. This one will get you oohs and aahs before they have that first bite!
The key to the extra crispy coating and retaining the moistness is a minimum 15 minute sitting time after the first coating, and then a second coating then baked at high heat, if you like some heat add in some cayenne pepper to the seasoning mix and/or some hot sauce to the egg/milk mixture... No milk or cream? don't worry this will work well with just eggs. After you make this a couple of...
I came up with this recipe and decided to make it my first contribution to this awesome group of food lovers and excellent cooks. It is a delicious appetizer that I serve with Tortilla scoops or Tortilla chips but you could use pita chips or bagel chips too if you want. I haven't had them with regular chips but the ridged ones may be able to withstand the thickness of this dip. This is so...
Are you crazy for lemons like I am? if you are you must try this recipe!
Exotic, tasty yet economical. Very nice combo of flavors.
We have always loved Basmati rice, since we were introduced to curries we often serve it topped with spicy chicken. Clipped this great tasting recipe for both chicken thighs or chicken legs awhile back. So good and so easy, prep, pop in a slow cooker and you have a super meal on the days you don't have time to spend in the kitchen. Like many curry lovers I am generous in the adding of my...
These Asian inspired drumsticks are finger lickin' good! The glaze would be great with thighs or wings too. Chicken breast would get too tough. It's hard to believe this recipe is low in points. Serve with steamed vegetables to make this a complete low fat meal, and drizzle the remaining glaze over the vegetables. It's also wonderful over rice. Sriracha hot sauce (the one with the...
This is my daughter's recipe. It is a very easy to put together. As a matter of fact I sometimes marinate the chicken and cook it off 2 days before making the sauce. So all that is left to do is making the sauce and cooking rice. As they say...easy peasy!
This is a breading recipe I concocted a while back. It is similar to “Shake ‘n’ Bake” style chicken but much better. This tastes just as good as deep-fried, if not better. I do make this recipe with cutlets also, but the cook time is much less, about 30 minutes, depending on how thick they are. The recipe can actually bread more than 4 pieces.
This is one of my daughter's recipes which we made together when she was visiting after Easter.
Nummy fall dish, be sure to use apples that keep their shape when cooked, such as golden delicious. adapted from Canadian Living mag.
This is an adapted recipe that originally came from Cooking Light. This is our favorite low fat dish. Full of flavor, you'll never guess it's low fat. We have this 3-4 times per month.
I was going through my binder of clipped recipes and rediscovered this simple recipe by Kellogg's. The time to prepare this recipe does not include the 1 hour marinating time.
This is the way my Mom has been making enchiladas my whole life. She got the basic recipe from neighbors when she was a teenager. They are made with flour tortillas instead of corn and get a pasty texture which we enjoy. We always eat this with Rice Chile Verde for a nice unhealthy comfort food meal. My Mom has also frozen these alongside the rice chile verde in aluminum containers...they bake up...
If you do not use coconut flour or have sour cream on hand, this is what I have done with great results. I used cream cheese and no flour. Just whisked in the cheese to the sauce in the pan. The servings are relative to how many chicken pieces you use. I use only 2 chicken legs and thighs as it is only the two of us.
I was searching for a Cashew Chicken recipe like the really good ones at Chinese restaurants, I came across this one in a cookbook of Chinese recipes, I decided to try it and it's actually one of the better stir-fry's I've made, I think you will like it if you try it, there's really not a large amount to this recipe it is good so you may want seconds I made this for two people...
Nana was my grandmother in law. This chicken wings are fabulous. Only 3 ingredients. They take a long time to cook, but the results are out of this world. The meat slides of the bone.
Easy way to have Chicken Marsala for dinner when you have to be away from home. Uses a slow cooker! I like to serve with mashed potatoes and steamed green beans.
"This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It had 3 points per serving on the old program. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. Hope you enjoy and happy eating!"
