Step 1
Make the sauce first by combining the sauce ingredients in a sauce pan and simmering at medium-high heat for 10 minutes. Set aside and allow to cool before serving.
Step 2
Start the filling mixture by sauteing the chorizo sausage in a skillet, crumbling it as it cooks until it is fully crisp. Add the corn, Lima beans, green peppers and salt. Mix well and saute for 5 minutes so the mixture gets hot.
Step 3
While the filling mixture is cooking, prepare your choice of shells. Serve immediately with the accompanying sauce.
