Step 1

Heat the oil in a large ovenproof skillet over medium heat. Add the potatoes.

Step 2

Toss and spread potato cubes into a single layer.

Step 3

Cover and cook 5 minutes. Flip cubes. Cook, uncovered for another 5 minutes (potatoes should be starting to brown at this point). Salt and pepper taste.

Step 4

Add the onion, garlic and bell pepper and chorizo. Continue to cook the potatoes and vegetables, stirring occasionally another 5 minutes or until they begin to soften.

Step 5

Add the beans, toss and heat through for 1 to 2 minutes.

Step 6

Add the chile sauce or salsa, and top with the cheese.

Step 7

Place under the broiler until the cheese has melted and is starting to brown.

Step 8

Fry the eggs in a touch of butter, over easy or sunny side up (do not overcook, you want the yolks runny).

Step 9

Divide vegetable and meat mixture between two bowls. Place one to two eggs on top of each bowl.

Step 10

Top with your choice of the additional toppings.

Step 11

Serve and enjoy!

Yes, to everything (except the cheese)! This makes a wonderful brunch dish - though it's quite filling! I made only half the recipe and we both were absolutely stuffed. This is a great mixup of ingredients - most of which are our favorites, so I knew we would love it. For the salsa, we chose the small can of Herdez Salsa Casera, which is quite mild, and it was perfect in this since it didn't compete with the chorizo. Used all the topping ingredients, but didn't use the cheese on mine because I don't like melty cheese very much. But DH had plenty on his and he was wowed. Thanks for sharing!
