Linda's Prize Winning Chili

"This chili won 1st. place in a chili cook-off when I worked at the telephone company. It is my own original recipe and one I am very proud to share! This is a big batch of chili and fills a 6.5 quart crock pot. Don't let the list of ingredients and steps scare you... It is really easy to prepare and fun to make."

Step 1

Brown ground beef and sausage (removed from casings) in frying pan. When cooked through, put in crock pot, draining off grease.

Step 2

To the frying pan, add onion, garlic, 1 can of Mexican tomatoes, and cook on medium heat, until onions are done, about 10 minutes.

Step 3

Add all other tomatoes, tomato paste, cumin, chili powder, paprika, bay leaves, celery flakes, jalapeno juice, Frank's Red Hot sauce, and cook for 1/2 hour on medium heat.

Step 4

Add bouillon dissolved in water, cocoa and sugar. Stir well, then add kidney beans.

Step 5

Cook on high for 8 hours in crock pot.

Step 6

About 20 minutes before ready to eat, stir together the flour and cornmeal.

Step 7

Add hot water and mix well. Stir into chili mixture, and cook for 20 minutes.

Step 8

Pull out bay leaves before serving.

Step 9

Serve hot.

Everyone loves chili in my family so that's what I made for my Christmas Eve gathering. I used a 6 at crock pot and it was filled to the brim! It didn't take long for it to vanish! I had a bowl myself and it was full of flavor, just the right amount of spicy so everyone could enjoy it, and for those who wanted to kick up the heat I left a small bottle of Dave's insanity sauce, but it was left unopened. So I guess the 30 some odd people that were here thought it was excellent just the way I made it. Yayyyy!

I love making chili and each time do not follow a recipe but add whatever, whenever. But WOW... this chili seems to have all the right stuff!!! So glad I made this recipe exactly as written. Very good :)

Nice chili, not enough heat for us,we would also adjust the cumin upwards. No beans would be added here either. Overall a good chili but we have had better.

I am remiss in not reviewing this sooner. I printed out this recipe a couple of months ago and followed to to a "T." Best I've ever made, the crowd loved it, and I've been cooking for going on 40 years. No need to come up with your own recipe, when this lady has the bomb.

After tasting this chili I can see where it gets to the top of the charts during a cook-off! Spectacular flavors from all the awesome ingredients and spices used to make it! You can make it mild or hot, you control the heat so you can acclimate it to your own taste with no problem. I made half of it fairly mild, then removed it from the crockpot. Then I added about 1/8 teaspoon of Dave's insanity sauce for a real kick. It's delicious both ways and a sure winner for us!

My family and I loved this chili! It was so flavorful and I enjoyed adding things here and there throughout the cooking process. I can't imagine using any other recipe after making this. It takes time to make but so worth it!
