Hearts of Palm Parmesan Salad

"This is a Costa Rican recipe that I enjoy very much.If possible use only fresh shaved parmesan. You may serve this on a bed of lettuce"

Step 1

Cut the hearts of palm into 1/2 inch slices

Step 2

Combine all the ingredients except the parmesan cheese in a large bowl, toss gently and allow to sit at room temperature for 30 minutes

Step 3

Serve topped with the shaved parmesan on top

My mother loved it! Well-written, certainly easy to make. Mom said it reminded her of being in Panama, so it brought back good memories for her. And the carb count can't be beat! I was not really a fan, but that's personal taste so I'm still giving it full stars. I'll be making it for her again, for sure.

This was wonderful!!! I used cherry tomatoes because that is what I had but otherwise followed the instructions...reminds me of when we were in Costa Rica. Thank you for posting. Definately will make this again
