Step 1
Drizzle oil in to a pan, add onions and garlic, saute for approximately 8 minutes over medium heat or until the onions are nicely browned.
Step 2
Add remaining ingredients to the pan, except parsley, cover, turn heat to low, cook for 25 minutes, giving it a few stirs.
Step 3
Cook until the liquid has been absorbed and the rice is cooked
Step 4
Remove bay leaf, stir in parsley and serve
