Preheat oven to 350f degrees
Spray an 8 inch square baking dish with veggies spray and dust with cocoa, shaking out excess.
In a small saucepan melt margarine on low heat; remove from heat and stir in cocoa, sugar, egg, applesauce and vanilla, beating until smooth
In a separate bowl add flour , baking soda and salt , whisk together to blend; stir in walnuts if using. Gently stir flour mixture into cocoa mixtrue until well combined.
Pour into prepared pan and bake for 25 to 30 minutes or until set.
Cool completely and cut into 16 squares with a hot wet knife, store in refrerator.
Alternately; spoon batter into mini cup cake pappers, bake until toothpick stuck in centre comes out clean, about 20 minutes. Top with choclolate frosting.
