Crustless Tomato Quiche

"No need for a crust on this delicious quiche, Use those wonderful luscious fresh vine ripened tomatoes form the garden!!"

Step 1

In bottom lightly greased quish dish or pie plate, spread cheese.

Step 2

Layer onion, then tomato slices over cheese.

Step 3

Sprinkle basil over tomatoes.

Step 4

Beat together eggs with milk, salt and pepper.

Step 5

Slowly pour eggs mixture over tomato and onion mixture.

Step 6

Bake in preheated 350f degree oven for 35 to 30 minutes or intil filling is just set in the centre.

I had lots of tomatoes in my garden and this was a great way to use some of them up. It made a delicious brunch for us!

We are very fond of crustless Quiche, right up there with our omelets! Used freshly picked vine ripened tomatoes and fresh basil from my herb barrel, this Quiche made for one awesome breakfast. Added to my Breakfast and Brunch Cookbook and looking forward to serving it to family and friends.

I made this as instructed except for using non fat evaporated milk and this was delicious. I didn't miss the crust at all. Made for the Billboard Recipe Tag Game.
