Step 1

Combine flour and coffee granules in a large bowl. Add the brown sugar and next 3 ingredients; stir well.

Step 2

Cut in butter with a pastry blender until mixture resembles coarse meal. Press half of the crumb mixture into a greased 9 inch square baking pan; set aside.

Step 3

Combine sour cream and baking soda, stirring well. Add to the remaining crumb mixture, stirring just until dry ingredients are moistened. Add the egg, stirring gently to combine.

Step 4

Pour sour cream mixture over the crumb mixture in the pan; sprinkle with pecans. Bake at 350 degrees for 45 minutes.

Absolutely delicious! I used espresso powder and dark brown sugar. What I loved the most is that the crumb mixture is on the bottom, as opposed to the top. The coffee flavor isn't overwhelming at all, there is just a hint - but it's a delicious hint! Will definitely be making this quick-to-put-together coffee cake again!

Daily Inspiration

What a wonderful coffee cake. Easy to make and the outcome is delicious. I used dark brown sugar as I was out of light, so the cake was nice and rich. DH is in heaven. : )
