Step 1
Core and quarter apple (Do not peel) Arrange standing around edge of buttered ramekin Mix together blueberries, brown sugar and vanilla Fill the centre of the ramekin with the blueberry mixture Dot the top with 2 teaspoons butter Cover ramekin with plastic wrap
Step 2
Pierce top of wrap once or twice
Step 3
Place ramekin on plate
Step 4
Microwave on high for 3 minutes, check and add 1 minute at a time until the apple falls.
Step 5
Serve warm Top with a blob of whipped cream or vanilla ice cream.
Step 6
Repeat to make as many as you like, but Microwave one ramekin at a time Other berries can be substituted.
Step 7
Diabetics leave the brown sugar out or use sugar substitute.
