Step 1

In a large stock pot over medium heat, add the olive oil and cook the stew meat and onion until meat is brown.

Step 2

Add the salt, pepper, carrots, celery, thyme, parsley and 2 cups of beef broth.

Step 3

Cover with a lid and simmer for 45 minutes or until meat is tender.

Step 4

Add the water and the rest of broth; turn the heat up to bring to a boil.

Step 5

Add the noodles to the pot and turn heat to medium. Cook until noodles are done.

This was really good and reminded me of Beef Stew with noodles instead of potatoes. We loved it and it warmed our tummies!

Derf "RIP" Forever in our Kitchen

wonderful rich delicious soup !! I added 4 chopped mushrooms i needed to use up and i was out of noodles so i used veggie spiral pasta. So pleased with the flavours and i will definately be making this again, thanks for posting.
