BIO: I'm enjoying being a SAHM of my adorable son Max who was born February 2010. I previously worked at a public library for 9 years. I also have a wonderful Hubby who I've been married to since August 2000. I love to cook and share good food with others. I enjoy perusing my 100's of cookbooks but usually end up finding a recipe online to make because I can look up recipes by ingredients I have or I can have fun playing recipe tag games. I'm not a great photographer but I enjoy bringing a smile to peoples faces by placing "Freddy Cat" in my food photos. I'm also known for being Pippi Longstocking every year for Halloween. I just started Weight Watcher's online in June 2011 and have lost 26 pounds in 4 months. I love ethnic food, especially Middle Eastern flavors. I also like Filipino food which I was introduced to when I got married because my Hubby is half Filipino. I'm half Polish and part Swedish and Bohemian so love to try those foods as well. We have an ethnic themed Christmas every year. I miss the old recipezaar and am very greatful to Kittencal for creating this place that is similar to it but better!

Perfect Brown Rice Re: Perfect Brown Rice Wonderful way to cook brown rice! Brown rice is one of my picky toddler Max's staples, and he loved this one. I enjoyed the chewy texture, but would have liked even more garlic and chicken flavor. Mushrooms would have been a great addition too. I've made oven baked brown rice before, but I never thought of using my cast iron cookware...it worked great! I did make 2/3 of the recipe as I only had 2 cups of rice. I used 2T olive oil which was even too much for us, as the rice ends up with a greasy texture. I used water/chicken bouillion and omitted the salt. My Hubby wants me to make fried rice with the leftovers. Freddy Cat says hi! Made for the Billboard recipe tag game.
Dill Pickle Flavoured Potato Bites Re: Dill Pickle Flavoured Potato Bites Sorry, if this is a duplicate...I forgot to add the stars. Oh Yum! I love dill pickle flavor and it goes perfectly with potatoes. I made this with thick sliced golden potatoes. I may have boiled them too long because they just crumbled when I tried to flatten them but it doesn't matter it just ended up more like potato salad than patties. I also used spray oil to make it lighter and sprinkled the dried dill until it looked good. For salt, I used garlic salt. Thanks for this recipe...it's a keeper. Freddy Cat says hi! Chocolate Buttercream Frosting Re: Chocolate Buttercream Frosting The BEST! This has become my go to recipe for chocolate frosting. I LOVE the dark version and I can eat it by the spoonful! YUM YUM YUM
Linda's Apple Brownies Re: Linda's Apple Brownies Very good! I made a few changes to make this healthier so it turned out more like a lightly sweet snack cake which is great for my diet and my 20 month old son. I used Brummel and Brown spread, 1/2 cup Splenda sugar blend and added 1/2 tsp nutmeg, 1/4 tsp salt, 1 tsp vanilla and the zest of 1 lemon. I baked it in a glass 8x8 for 30 minutes. Party Pumpkin Re: Party Pumpkin I love this idea! It appealed to me as a healthy nonfat dessert but I think it would be even better with some butter. I used a 2 pound sugar pumpkin so used 1/4-1/2 of the ingredients . For the sugar I used 2tbsp Splenda sugar blend and 2tbsp brown sugar. I think all brown sugar or maple syrup would improve the recipe too. I didn't care for it with yogurt.
