Step 1: Wash strawberries and remove stems.
Step 2: Combine berries, sugar, and extract in a medium-sized saucepan. Using medium heat, bring to a simmer, then cook for 5 minutes, stirring constantly and breaking up the strawberries with a wooden spoon. After 5 minutes, remove from heat and allow to cool slightly if you have a glass blender jar, and let it cool a lot if you have a plastic blender jar, so it doesn't explode when you turn it on.
Step 3: When cool, transfer mixture to the blender, and pulse until the consistency is the way you like it. You can leave it in chunks or make it smooth.
Step 4: Store in a covered container in the refrigerator, or freeze in storage bags or containers until ready to use. This will last a week or so in the fridge.
