Step 1: Preheat oven to 250 degrees. Line a baking sheet with two layers of paper towels, set aside.
Step 2: In a large bowl, stir together the potatoes, onion, eggs, matzo meal and salt until combined.
Step 3: Pour enough extra virgin olive oil into a large skillet, to reach a depth of about 1/4". Heat over medium high until shimmering.
Step 4: Shape potato mixture into 3" patties. Working in batches, fry the patties until browned and crisp, about 4-6 minutes per side.
Step 5: Place the finished latkes on the prepared pan and transfer to the oven to keep warm. Continue frying with the remaining potato mixture and serve immediately.
