Step 1: Beat the eggs, cottage cheese, milk and flour together - really beat the mixture well
Step 2: Add butter to a large skillet over medium high heat
Step 3: Add the shalotts & mushrooms, fry for 2 minutes
Step 4: Add egg mixture, lower heat a bit, cover and cook for 2 minutes
Step 5: Add gruyere, cover, and continue cooking for 3 more minute
Step 6: Serve with the guacamole on top.
