Throw-Together Meals

"Things that are technically recipes, but which basically require nothing more than throwing a bunch of ingredients together with some seasonings and coming out with dinner. They work as written, but when I make them I rarely duplicate them exactly, and I wouldn't expect anyone else to, either."

Artichoke Chicken
Artichoke Chicken

This looks nice for a dinner with company, but is not so difficult you can't make it for a weeknight supper for the family.

Ah...the recipes I create because I have fresh vegetables that are about to die. This was easy, quick, and really pretty tasty.

Avocado and Cream Cheese chicken
Avocado and Cream Cheese chicken

This one was born because avocados were on sale and we'd already eaten enough guacamole to fill a swimming pool. It ended up being a nice change of pace!

I love being able to arbitrarily toss things into it that seem like they should taste good, especially if you add an egg mixture to hold it all together. I used a spice blend from Spice Merchants, but feel free to use whatever spice...

Basil Chicken and Vegetables
Basil Chicken and Vegetables

The original recipe is from Dlife.com, but I've added some things, changed some amounts, and changed how it's cooked. Originally, it called for splitting everything between four foil packets and baking or grilling. You could easily...

Broccoli and Chicken Casserole
Broccoli and Chicken Casserole

If you're a purist, then this isn't for you. However, if you see the value in cooking with frozen vegetables and canned soups for an easy meal, then go for it! This is another one that can be made the day before and put in the oven...

Buttery Pasta with Herbs
Buttery Pasta with Herbs

I just threw this together for a side dish, but it's really tasty. Any kind of pasta will work (I really wanted vermicelli), but seashell is what I had so it's what I used.

I've made this for years in various incarnations, but never remembered to write down what I did. Since I finally wrote it down, I figured I might as well post it. I've also made this in mini muffin tins (makes about 18) for individual...

Cheesy Chicken and Broccoli Casserole

It's winter, and I want comfort food. Unfortunately, I am not allowed to cook with carbs. This seems to fit the bill perfectly, and is very easy to put together.

Cheesy Chicken Pot Pie
Cheesy Chicken Pot Pie

This takes almost zero effort to put together, but kids and adults alike eat it up. I sometimes double it and use a 9x13 pan instead of a round casserole (which makes the crust look funny, but whatever).

Cheesy Crab Casserole
Cheesy Crab Casserole

Imitation crab, frozen vegetables, and canned soup. Nothing at all fancy, and certainly not for those who think using those things is beneath them. But for those who want good, pretty healthy comfort food, this fits the bill perfectly....

Yet another "what do I have in my pantry" desperation meal created one night when I wasn't expecting to have to cook. Feel free to substitute whatever you might have on-hand or think you would like better.

Chicken Stir Fry
Chicken Stir Fry

I made this one up purely so I could test out a new pan. The amounts or approximate, but pretty close. A word of warning about Thai Chili Garlic sauce, though: it is WAY hot! Use less or leave it out entirely if you don't like spicy...

I made this one up as I went along, which means I'm pretty sure the measurements are really close, but feel free to tweak more or less of anything to your particular taste. Prep time includes marinating time.

The measurements are pretty close to what I did, although when I made this up for dinner I just randomly tossed things into the pan. It came out really, really tasty, though, and isn't too bad on carbs (which is imperative when you...

I don't for the life of me remember where I got this one, but I think the original had corn instead of black beans. Which you can easily use if you prefer, or add a can of corn as well as the black beans. Whatever makes you happy. Heat...

Crustless Crab Quiche
Crustless Crab Quiche

Crustless quiche was a new adventure for me when we started having to do ulta-low-carb meals, but it turns out quiche lends itself quite well to having no crust. I always use a glass pie plate and have never had an issue with it...
