Step by Step Method

Step 1

Salt the grated zucchini and place it in a colander in the sink. Allow the zucchini to drain for 5 minutes, then squeeze out the excess moisture.

Step 2

Heat the butter in a large skillet and saute the zucchini over medium-high heat for 2 - 3 minutes, until just turning translucent.

Step 3

Season with pepper, toss with the cheese, and serve.

Daily Inspiration

Delicious way to serve up zucchini and really easy to make. Loved the addition of the parmesan cheese. The only change I made was to reduce the salt as the parmesan cheese is also salty.

Super easy and so delicious. I halved the recipe and made exactly as written and enjoyed this served with a poached egg centred in the middle for breakfast. Just perfect!

Delicious! I mixed two yellow summer squash and 2 small zucchini - so mine was more yellow than green. Grated the squash and cheese using a food processor. Mine wasn't translucent but was great mixed with pasta. Family loved it! Thanks for sharing!

This is so yummy and easy...I cut it way down to one serving...loved all the ingredients...I wish I would have made more because it was difficult to stop eating it...it never did get translucent...but that didn't seem to matter...I sauteed it for 3 minutes and continued on to step 3...came out perfect...made for "First Time" tag game...2/11/2020...Update: I've been making this tasty dish for while now...but this time I used my hand held spiralizer and it came out just as good as normal...I used a combo of zucchini and yellow summer squash...
