"This is a good base for pasta or pizza sauce. When thawed, add garlic, herbs and cheese and away you go. This also works well with canned tomatoes."

Step by Step Method

Step 1

Chop or partially puree tomatoes to your liking.

Step 2

Heat oil in large pan and add onion and celery, saute for about 10 minutes or until onion and celery are soft.

Step 3

Add zucchini and cook until soft.

Step 4

Add tomatoes, sugar and salt.

Step 5

Bring to boil, and turn down to a simmer.

Step 6

Simmer for 30 minutes.

Step 7

Cool and pack into freezer containers.

Step 8

Freeze up to 3 months.

This recipe will be a great base to any sauce ~ I made exactly as written...... UMMM WAIT... No I didn't! I grated the Zucchini and Celery, so as it would make it easier to hide from DH, and easier to hand blend later on for other recipes! ;-) I use the .....What you don't see you won't taste philosophy!!! AGAIN...a great base sauce! I will be using this is so much, although I will have to blend as explained. I am going to try this base sauce using roasted tomato's next time. A keeper for me Luvcookn...Thanks

I.used.canned.tomatoes.because.I.didn't.have.enough..left.from.my.garden,and.halved.the.recipe...They.....tasted.so.good.to.me... I.made.it.chunky.style.and.just.ate.it.as.a.side.with.some.fish! Will.make.again.for.sure!..Thank.you.for.this.one....Patti!Linda

I made half a batch as a trial run - big mistake I should have doubled it! It makes a wonderful base for spaghetti sauce, I'm sure it will be great on pizza too! Alls good as have plenty of zucchini and tomatoes to go! Made as posted excepting we ate it fresh. Will definitely be making and freezing packages to enjoy a bit of summer during our long cold winter months!
