"A "blondie" type bar with the added "zing" of coffee. No need to peel the zukes. And you can just dice them instead of shredding if you prefer."

Step by Step Method

Step 1

Preheat oven to 350°F. Grease and flour a 8x8-inch baking pan.

Step 2

Dissolve instant coffee in hot water.

Step 3

Mix coffee with remaining ingredients together in a large bowl, until just moistened.

Step 4

Spread into prepared pan.

Step 5

Bake 25 minutes.

Step 6

Cool in pan and cut into 9 bars.

Not the prettiest Bar I have ever made but this is one of the tastiest! This bar has a lovely sweet flavor and the bars have a a really moist pudding consistency. I made exactly as written ~ the mix seemed very runny so I added a little more flour to the mix, which made it a little thicker, although still not as thick as a usual batter. I also grated the zucchini, which I thought would work better than dicing (which it seemed to). I did think the batter would not work, but it did turn out really well, I did leave a few minutes longer in the oven and the bars came so moist. Although the coffee flavor did not come through very strongly, a subtle hint of coffee flavor did shine through enough to make this bar very moreish. DH took one bite and said they were nice but he did recognize the Zucchini, so that was it for him! The rest of us did really enjoy them. This is a great and tasty little bar, which is a great way to use Zucchini.
