"A great way to use an abundance of Zucchini. This is so easy, so creamy and so very, very nice. This soup can be frozen or kept for 2 days in the fridge. If you don't have fresh Basil, a basil pesto can be used. Also vegetable stock can be used instead of chicken stock."

Step by Step Method

Step 1

Fry onion gently until transparent, taking care not to brown it. This should take about 5 minutes.

Step 2

Add vegetables, stock and water, and simmer for 10 minutes (taking care not to simmer any longer than this to avoid the soup becoming bitter).

Step 3

Add cheese, cream and basil and simmer a further 2 minutes. (At this stage you can blend the soup for smooth and creamy finish, but this is not necessary).

Step 4

Season with salt and pepper to taste if desired.

Step 5

Serve with a thick crusty bread.

Absolutely heavenly! I made this a day before eating so the delicate flavours would have time to meld. And so glad I did! I too chose to leave out the potato, and did not miss it at all, and did not puree. Will be making this again next week. Thank you for sharing your delicious soup Tis! Made for the Pick Me! This is SOME Soup! Such Excellent results for a quick and easy soup. It is vital to follow and pay attention to the the cooking time directions. The 10 minute for the zucchini and 2 minute cooking of the basil makes it so that especially the basil retains it's brightened taste. Chose not to puree and leaving it whole and I didn't add the potato to save on carbs. Also, used additional basil and parmesan cheese (sprinkling some of it over the top of each plate). We are So In Love with this soup! Thanks so much Tis for sharing, it's a Keeper and added to my Best Of File! Made it for Billboard Tag.
