Step by Step Method

Step 1

Preheat oven to 180C.

Step 2

Grease a 20cm x 30cm lamington pan and line the base and 2 long sides with baking paper.

Step 3

Place the zucchini, carrot, capsicum, spring onion, bacon, cheese and flour in a large bowl and stir to combine.

Step 4

Add the egg, milk and oil and stir to combine and season with salt and pepper.

Step 5

Spoon the mixture into the prepared pan and smooth the surface.

Step 6

Bake for 40 minutes or until firm to the touch.

Step 7

Set aside to cool.

Step 8

Cut into squares.

Step 9

For a light meal serve with mixed salad leaves or put a slice in a lunch box.

Except for using some peas and spring onions I had left over, I made this as written. The Zucchini lovers of the family really enjoyed this recipe. So light, fluffy and moist, as so delicious. I think this recipe would lend itself to any vegetable being used. It reheated so well the next day also, so it was happily taken to lunch and enjoyed the next day. A great simple, easy and tasty way to use your fresh Zucchini. Thanks Pat.
