"I first made this for my youngest daughter in 2006. She would never eat zucchini..ever! I made this and asked her to try it. To my amazement, she ate it and loved it! And she now makes it for her family."

Step by Step Method

Step 1

Melt 2 tbsp butter and add 1/2 cup bread crumbs; set aside.

Step 2

Melt remaining 4 tbsp butter in large frying pan.

Step 3

Add sliced zucchini and saute for 3 - 5 minutes.

Step 4

Add bread crumb mixture, soup, cheese, onion and salt and pepper (if using).

Step 5

Reduce heat and cook for 5 minutes.

Step 6

Top with remaining 1/2 cup bread crumbs.

This is a wow recipe for this zucchini lover. Have to wonder how I missed it! Made stove top but did pour into a small casserole dish topped with the crumbs baked for 10 minutes, served with Teresa's #recipe21602, the spicy sweet hot marinated cucumbers made for one great evening meal. Have to love fresh from the summer garden vegetables.

Daily Inspiration

This is a very nice and tasty side dish casserole. We love zucchini so I'm always looking for new ways to use it up. Served this along with some chicken schnitzel and it made a very delicious meal.

LOVELY Recipe! This is one of those recipes that is so easy that you could put together in minutes with excellent results! Through my rush of trying to manage a food item on the outdoor grill, laundry, and this recipe, I browned the breadcrumbs on the stovetop, followed the recipe by using the stovetop but then placed it in a casserole dish. When I realized that I wasn't following the recipe as stated, it was too late. Results: a delicious side and because it was so successful, I don't think I will change a thing. I also added black pepper and sprinkled a little bit of cheese over the top before topping with the breadcrumbs and placing it in the oven. Thank you Luvcookn for sharing. Made it for Billboard Tag.

Wow wow wow, did I ever enjoy this one. I used Italian flavored bread crumbs and shredded sharp cheddar cheese and I really liked it.
