"Another recipe from my "Taste of Home Contest Winners" magazine. This is so easy, yet high on flavor. The key to this recipe is using fresh lime juice and parsley, could even use fresh dill. Time doesn't include chilling time."

  • To ensure the best flavor, use freshly squeezed lime juice rather than bottled.
  • For a more intense flavor, use a hot pepper sauce with a higher Scoville rating.

  • Substitute olive oil for canola oil. The benefit of this substitution is that olive oil is a healthier alternative with higher levels of antioxidants and healthy fats. It also adds a unique flavor to the dish.
  • Substitute fresh dill for parsley. The benefit of this substitution is that dill has a stronger flavor than parsley, which can add more depth and complexity to the dish. Additionally, dill is rich in nutrients like vitamin A and C, as well as calcium and iron.

Lemon-Garlic Shrimp Replace the lime juice with lemon juice and add 2 cloves garlic, minced, to the marinade. Omit the dill weed and hot sauce, and add 1 teaspoon Italian seasoning.

Roasted Asparagus with Parmesan: This simple side dish pairs perfectly with the zesty marinated shrimp. Roasted asparagus with Parmesan is a delicious combination of flavors that complements the shrimp perfectly. The Parmesan adds a nutty, savory flavor that is a great contrast to the shrimp's zesty marinade.

Garlic Roasted Potatoes: Garlic roasted potatoes are a delicious side dish that pairs perfectly with the marinated shrimp. The potatoes are roasted with garlic and olive oil, giving them a savory flavor that complements the zesty marinade of the shrimp. The potatoes are also a great way to add a starchy component to the meal.

Made for the FYC Tag Game & I'm sorry to be late meeting this obligation. Since it was undertaken in haste, I did make some chgs, mostly based on what I had on-hand. I used white onion vs red, dry herbs & didn't have any fresh lime or lemon to slice. All that said, these shrimp were very tasty, made in a flash & served to game night party guests last night as part of a seafood appetizer salad plate. My guests were happy, so thx for sharing your recipe w/us. (A pic or pics will post after I've had some time to organize the mess & edit photos)
