"I love recipes that include a full meal. It's even better when you find one that is healthy, too. This recipe comes from Eating Well magazine, but I changed it up just a bit. I love the flavors! If you can't find za'atar spice mix, there are many online recipes for easily making your own. Enjoy!"

Step by Step Method

Step 1

Position rack in bottom third of your oven. Preheat to 450 degrees F. Coat a rimmed baking sheet with cooking spray (or use non-stick foil).

Step 2

Cut the orange in half and slice 1/4 inch slices (to form semi-circle slices). Toss in a large bowl with the green beans, onion, olives, oil, wine, salt and 1/4 t. pepper. Spread the mixture in an even layer on the prepared pan. Toss chicken with za'atar in the bowl, then place on top of the green bean mixture.

Step 3

Roast on the bottom rack until the green beans are tender and the chicken is no longer pink in the middle, about 15 minutes.

Step 4

Meanwhile, add broth, remaining 1/4 t pepper to a medium saucepan. Bring to a boil. Stir in couscous. Remove from heat, cover and let stand for 5 minutes. Fluff with a fork. Serve with the chicken and veggies.

I cannot tell you how super easy this was to put together and how absolutely flavorful was the result! Based on this, I think I will be doing a lot of sheet pan dinners. The orange and the olives gives such a nice unique taste to the green beans and the seasoning was just right. I would definitely make this again. Made for Culinary Quest 2021.

Daily Inspiration

I am soooo loving these one-pan roasted meals. What beautiful colors and flavors. Loved all the veggie combinations along with the orange and olives. The only change I made was to use boneless/skinless chicken thighs/drumsticks as I did not have chicken tenders on hand. I lowered the oven temp some as my oven cooks hotter than normal and I extended the cooking time. I purchased whole foods zaatar spice blend and it was really delicious. Thanks for a great recipe and meal.
