"This pulled pork is so good, I'm drooling just typing in the recipe. Super easy in the crockpot, but tastes like it's been pit smoked for days. The chipotles and beer balance out the honey and brown sugar, but if you're not a fan of sweet barbeque sauce, cut the honey and sugar in half. Adapted from ROV chef at fooddotcom"

Step by Step Method
Step 1
Puree chipotle peppers with adobo sauce until smooth. Combine with remaining ingredients and pour over pork in large crock pot.
Step 2
Start crock pot at high for 10 minutes, then turn to low and cook at least 12 hours.
Step 3
Once pork is falling apart, remove from cooker and wrap in foil. Set aside.
Step 4
Remove fat layer from liquid with a gravy separator or turkey baster. Transfer sauce to a saucepan and simmer on med-low heat until it thickens. Adjust seasoning to taste.
Step 5
Pull pork apart with 2 forks, removing excess fat and bones, if any.
Step 6
Put meat back in crock pot on warm and stir in sauce.
Step 7
Serve on a warm roll or bun with cole slaw.
