White Chocolate Cranberry Cookies
"A cookie that we discovered recently. The tartness of the cranberries sets off the white chocolate beautifully. I can't keep them in the house because DH keeps raiding the cookie jar! The original recipe called for dark brown sugar, but we much prefer the light brown which we find less cloyingly sweet. I've also added up to a full cup of dried cranberries, for a bit more tartness."

Step by Step Method
Step 1
In a large bowl cream the butter and sugars together, then beat in the egg and vanilla.
Step 2
Combine the flour, salt and baking soda, and gradually add to the butter mixture, mixing well.
Step 3
Stir in the cranberries and white chocolate chips.
Step 4
Drop by about a tablespoon each 2 inches apart on baking sheets, either coated with cooking spray or use silicone baking mats or parchment. Bake at 375°F for 8 - 10 minutes, or until lightly browned. Cool for about a minute before moving to wire racks to continue cooling.
