Step by Step Method

Step 1

To make the jalapeño syrup, stir the lime juice, sugar and water in a small pan over medium-low heat, without boiling, until the sugar has completely dissolved.

Step 2

Bring to the boil, then lower to a simmer. Continue to simmer for 10 to 15 minutes, without stirring, or until thick and syrupy.

Step 3

Add the jalapeño; cook for 5 minutes.

Step 4

Allow to cool to room temperature.

Step 5

Arrange the fruit on individual plates and drizzle with the syrup.

Step 6

Garnish with mint leaves and fresh jalapeño slices.

Step 7

Serve chilled.

Great recipe, Mike! I make a similar one with basil syrup, but his one is a "Wow", too! I love the sweet bite of the jalapeno and the watermelon/pineapple combo. What a great little dish to take to a potluck, which is what I did. It was a hit! Thanks for posting - made for Culinary Quest 2015.
