"My take on a similar flatbread recipe (from plainchickendotcom) but with fig preserves instead of honey. I use whole wheat pizza dough for the flatbread."

Step by Step Method

Step 1

Fry bacon until done but not real crispy. Chop each slice into 3 or 4 pieces.

Step 2

Preheat oven or grill to 500 F

Step 3

Place 1/4 of bacon slices on top of each flatbread. Drizzle 1 to 1 1/2 tablespoons of fig preserves over each flatbread. Top each flatbread with 1/4 of the brie cheese slices and 2 tablespoons of walnut pieces.

Step 4

Place flatbreads on a baking sheet, pizza stone, or on the grill not directly over the coals or flames and bake until cheese is melted, about 4 minutes.

I saw this recipe and decided to try it without the bacon. It was delicious! However I think it would be super delish with the bacon. I used extra thin small 8" pizza crust. We found that 2 pieces were enough. We loved the combination of flavours. Oh my, this is sinfully good & such an easy-fix. I used packaged flatbread rounds & chg'd to strawberry jam as we agreed. By accident, I also chg'd the order of assembly. I started by spreading jam on the rounds & then added the Brie, bacon & walnuts. They were halved & served today for a family brunch. They were on the table & the next time I looked, they were gone. BUT luckily Siggi had put the last 1 on my plate. :-) Their disappearing act earned them an encore in the wks ahead. Thx for sharing this recipe w/us.
