Ingredients

4 medium sized coloured peppers, seeds removed, cut from stem to bottom of the pepper

1 (340 gram) package mexican veggie ground round

1 cup refried beans

4 medium mushrooms, finely chopped

4 large garlic cloves, finely minced

3/4 cup onion, finely chopped

8 tablespoons Tex Mex Lite shredded cheese

How To Make This Recipe

Step

Preheat oven to 375f
Step

Mix all the ingredients except cheese and peppers together
Step

Stuff the peppers, place in oven proof dish, sprinkle on the cheese
Step

Loosely cover with foil for the first 10 minutes so the cheese doesn't get too brown. Re move foil and continue baking Bake for total another 15 minutes
