4 medium sized coloured peppers, seeds removed, cut from stem to bottom of the pepper
1 (340 gram) package mexican veggie ground round
1 cup refried beans
4 medium mushrooms, finely chopped
4 large garlic cloves, finely minced
3/4 cup onion, finely chopped
8 tablespoons Tex Mex Lite shredded cheese
Step 1 |
Preheat oven to 375f |
Step 2 |
Mix all the ingredients except cheese and peppers together |
Step 3 |
Stuff the peppers, place in oven proof dish, sprinkle on the cheese |
Step 4 |
Loosely cover with foil for the first 10 minutes so the cheese doesn't get too brown. Re move foil and continue baking Bake for total another 15 minutes |
