Servings3-4 |
1 (16 ounce) black beans, drained and rinsed. Reserve some of the bean juice
4 large garlic cloves, minced
2 jalapeno peppers, seeded, membrane removed, finely chopped
1 teaspoon olive oil
1 (340g) package mexican vegetarian ground meat substitute
2 cups lettuce, shredded
1 1/2 cups tomatoes, chopped
1 1/2 cups cheddar cheese, grated or use grated soy cheese
1 cup salsa, your favorite
2 avocados, peeled, sliced (optional)
3/4 cup sour cream (optional)
6 tostado shells
Step 1 |
Over medium heat fry the garlic and peppers in the olive oil for about 3 minutes |
Step 2 |
Add drained beans, mash them,mixing in the peppers and garlic. Add a bit of the reserved bean juice so you have a nice consistency |
Step 3 |
Heat the vegetarian hamburger over medium heat stirring frequently |
Step 4 |
When the beans are ready and the hamburger is heated through assemble your tostados |
Step 5 |
Add 3 tablespoons of beans to the bottom of the shell, then 3 tablespoons of burger, next lettuce, tomatoes, then cheese and last salsa |
Step 6 |
If using top with avacado and sour cream Enjoy |
